Hi Friends, It's official! The 30-Day Vegan Challenge starts in a few days. WOW, we're going to have a great journey. Let me prepare you by saying, the first step to success in the challenge is creating a strong intention. Why are you embarking on this 30 day adventure into plant-based eating? Make sure your reason is strong, and important to you. For example, my intention in hosting the challenge is to share my passion for the vegan lifestyle with as many people as possible. This has become a crucial part of my life because I see the potential for colossal healing--healing of our bodies, minds, spirits and the planet. Okay, so step two: hook up your kitchen! Stock it with whole foods (unprocessed), that are free of animal products, and exciting to your taste buds. It's important to have dried goods, spices and veggies in your kitchen at all times. Canned beans, pasta, sauces, frozen veggies and spices make for quick and tasty meals. I'll be sending plenty of recipes and meal suggestions, but until then check out this kitchen tour I shot just for you.
